Black Bean Enchiladas

Ingredients
- 1 tbsp olive oil
- 1 bag China Doll black beans
- 1 can yellow corn
- 8 large flour tortillas
- 2 cups shredded cheese
- 1½ cups enchilada sauce
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- ⅓ tsp oregano
- ½ tsp salt
- ¼ cup cilantro, chopped
Instructions
- Cook beans per package directions.
- Preheat oven to 350°F.
- Sauté onion and garlic in oil until soft.
- Add corn, beans, spices, and salt.
- Remove from heat, stir in ½ cup enchilada sauce.
- Spread ½ cup sauce in a 13×9 dish. Warm tortillas 30 sec.
- Fill tortillas with bean mix and cheese, roll, and place seam-side down.
- Pour remaining sauce over them, top with cheese.
- Bake 20–25 min until bubbly.
- Garnish with cilantro.
