- 1 tbsp olive oil
- 1 large onion, chopped
- 2 cups carrots, sliced
- 1 cup celery, sliced
- 3 cloves garlic, minced
- 3 (12 oz) bags China Doll black beans (or ~1½ cups dried, cooked)
- 2 cups chicken broth
- ½ cup water (in place of beer)
- 1½ tsp cumin
- ⅛–¼ tsp cayenne pepper
Instructions
- Soak and prepare China Doll black beans according to package directions
- In a large pot, heat olive oil over medium heat
- Add onion, carrots, celery, and garlic; sauté until vegetables are soft and fragrant, about 5–7 minutes
- Stir in cooked beans, chicken broth, water, cumin, and cayenne
- Bring to a boil
- Reduce heat and simmer uncovered for 30–40 minutes, until beans and vegetables are tender
- Optional: Use an immersion blender to blend part of the soup for a creamier texture
- Serve warm with toppings like sour cream, avocado, lime, or cilantro
