- 1 bag Dixie Lily black eyed peas (cooked)
- ⅓ cup cilantro, chopped
- 1 large tomato, diced
- 1 bell pepper, diced
- ½ red onion, diced
- 1 jalapeño, minced (optional)
- ¼ cup rice vinegar (or Italian dressing)
- Salt & pepper to taste
Instructions
- Cook peas per package, drain, and cool.
- Combine peas with chopped veggies and cilantro.
- Toss with vinegar or dressing, season, refrigerate 2 hrs before serving.
