  • 10–12 boneless pork chops (breakfast size)
  • Seasoning of your choice (salt, pepper, or favorite rub)
  • 1 cup Dixie Lily Yellow Rice
  • 2 cups water
  • 1 (10 oz) can diced tomatoes with chili peppers
  • 1 cup shredded cheese (optional topping)

Instructions

  1. Preheat oven to 350 °F. Season the pork chops and place them in a 9×13 baking dish.
  2. Bake for 20 minutes, then remove and set aside.
  3. In the same dish, combine yellow rice, water, and the diced tomatoes with chili peppers—mix well.
  4. Nestle the pork chops back on top of the rice mixture. Sprinkle cheese over the dish if desired.
  5. Bake uncovered for 35 minutes, or until rice is tender and liquid is absorbed.
  6. Let stand for a few minutes, then serve warm—savor the simple, bold flavors!
