  • 1 cup of Dixie Lily or China Doll Lima beans (soaked)
  • ¾ cup carrots, chopped
  • 1⅓ cup celery, chopped
  • 1 cup tomatoes, chopped
  • 6 cups water
  • 2 tbsp butter
  • ½ cup onion, chopped
  • 2 tbsp parsley, chopped
  • 2 tbsp flour
  • Salt & pepper

Instructions

  1. Oil beans and vegetables in water, then simmer covered 1 hr until tender.
  2. In a skillet, melt butter, sauté onion and parsley for 5 min, stir in flour for 1 min.
  3. Add mixture to soup, simmer 5 min until thickened. Season to taste.
