- 1 yellow onion, chopped
- 3 carrots, sliced
- 2 celery stalks, sliced
- 1 teaspoon minced garlic
- 1 teaspoon Italian seasoning
- 1 teaspoon parsley
- 1 teaspoon salt
- ½ teaspoon black pepper
- 6 cups chicken broth
- 1 rotisserie chicken, meat shredded
- 1 cup Dixie Lily white rice
Instructions
- Heat olive oil in a large pot over medium-high. Add onion, carrots, and celery; sauté for 3 minutes until tender.
- Stir in garlic, Italian seasoning, parsley, salt, and pepper; cook for 1 minute.
- Add shredded chicken, Dixie Lily rice, and chicken broth; bring to a boil.
- Reduce heat, cover, and simmer for 35–45 minutes, stirring occasionally, until rice is cooked and veggies are tender.
