Ingredients
- 1 cup dry China Doll black-eyed peas (soaked)
- 4 bacon slices, chopped
- 1 cup onion, chopped
- ½ cup green pepper, chopped
- 1 clove garlic, minced
- 1 tsp salt
- 1 bay leaf
- Dash hot & black pepper
- 3 cups cooked Dixie Lily rice
Instructions
- Cook peas until tender, drain
- Brown bacon, sauté onion, pepper, and garlic until soft
- Add peas, water to cover, and seasonings
- Simmer 40–50 min, remove bay leaf
- Stir in rice, cook 10 min more until flavors meld
