  • 1 cup Dixie Lily white rice
  • 4 cups whole milk
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon (plus extra for sprinkling)
  • ¼ teaspoon salt
  • 2 large eggs, beaten

Instructions

  1. In a medium saucepan, combine Dixie Lily rice, milk, sugar, and salt. Bring to a gentle boil over medium heat, stirring occasionally.
  2. Reduce heat to low and simmer for 25–30 minutes, stirring often, until the rice is tender and the mixture has thickened.
  3. Slowly whisk a small amount of the hot mixture into the beaten eggs to temper them. Then stir the egg mixture back into the pot.
  4. Cook for another 1–2 minutes, stirring constantly, until fully combined and creamy.
  5. Remove from heat and stir in vanilla and cinnamon.
  6. Serve warm or chilled. Top with extra cinnamon if desired.
