- 1 cup dried Dixie Lily lentils
- 4 cups vegetable or chicken broth
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt & pepper to taste
Instructions
- Sauté onion, garlic, carrots, celery, and bell pepper until tender.
- Add lentils, broth, cumin, paprika, salt, and pepper.
- Simmer 30–40 min until lentils are soft.
- Adjust seasoning and serve with bread.
