  • 1 cup dried Dixie Lily lentils
  • 4 cups vegetable or chicken broth
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt & pepper to taste

Instructions

  1. Sauté onion, garlic, carrots, celery, and bell pepper until tender.
  2. Add lentils, broth, cumin, paprika, salt, and pepper.
  3. Simmer 30–40 min until lentils are soft.
  4. Adjust seasoning and serve with bread.
